A three-night camping excursion by horseback to neighboring ranches is included. When to go: Year-round Difficulty: Easy to moderate Travel advisory: Learn some Spanish before you go; although the ranch owners speak good English, the gauchos don’t. Basic riding skills won’t hurt, either. High/low points: Galloping on your nimble little Criollo horse past a thundering herd of 800 cows.
